Backstory: The odds were stacked against us, my friends. We were the long shot by far! Cookbooks are a very hard sell. VEGAN cookbooks are even harder. In addition, we had a challenge getting media due to another timely event — the election! A bit more important than a cookbook, if you ask me. Note to self, never launch a book during a presidential election.

For now, enjoy this delicious recipe from Crazy Sexy Kitchen:
Pumpkin Bisque
Yield: 4 servings
2 cups pumpkin, butternut squash or sweet potato
2 tablespoons olive oil
1 1/2 cup white onions, diced
3 1/2 cups vegetable stock
5 cloves roasted garlic
1/4 cup sherry wine
1 1/2 tablespoons maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon cayenne
1/2 teaspoon sea salt
Cracked black pepper, to taste
Toasted pumpkin seeds for garnish (optional)
Pumpkin seed oil for garnish (optional)
1. Steam or boil the pumpkin or squash until tender.
2. Sauté onions over medium heat in olive oil until translucent.
3. Using a high-speed blender, combine pumpkin, onions, stock, garlic, wine, maple syrup and spices and blend until smooth.
4. Warm soup in saucepan. Serve hot, garnished with pumpkin seeds and a drizzle of pumpkin seed oil, if desired.

I have a question about soaking nuts for recipes? I understand the need to soak say cashews when I am making an aioli, but why when I am making snacks like curried cashews? My nuts seemed too soft. Any guidance from Chef Sarno would be appreciated. Thanks!

I have really enjoyed everything so far but just couldn’t get the Chocolate Walnut Cake frosting to work. It was a soupy mess. What went wrong? Seems like the proportions are incorrect.

The first recipe i choose had seitan in it. OMG that is cumbersome to make from scratch. Amazon doesn’t even carry any saitan mixes. Even the Arrowhead website i can’t find seitan.. very frustrating.

I love your style, I love your energy and I really like your recipes…so much so that I bought a copy for my step-daughter’s birthday coming up. It’s on it’s way to her as I type, when I realized, “Oh, man, is this diet appropriate for someone with Chron’s Disease with all it’s high fiber goodness? I started researching and am feeling perhaps not…. any ideas on this matter? She was stricken with it SEVERELY when a teenager and has managed it now for several years to the point she is ready to have a baby…. Help?
