Summer Sweets: How to Make Healthy Fruit Popsicles

It probably comes as no surprise that I’m head-over-heels in love with smoothies. There’s nothing better than a refreshing blend to kick off a busy day or enjoy as an afternoon snack.

Plus, making smoothies is a chance to be creative. We can add juicy fruits, tasty veggies, creamy nut milks and any other plant-powered goodies our hearts desire! I like to think of each one I whip up as its own work of art.

That’s why I’m so excited to bring you today’s recipe! The Test Kitchen Tuesday team and I went a little wild and reimagined two of our favorite smoothies from my cookbook, Crazy Sexy Juice. We froze ‘em into delicious fruit popsicles! Get ready to take a blissful bite of your smoothie today.

And here’s the best part: These frozen treats are also super healthy. They’re packed with tons of good-for-you nutrients.

First up is the Creamy Dreamy Orange Popsicle. If you want some extra immune-boosting, cancer-fighting, skin-protecting vitamin C, this pop’s for you. You’ll love every fresh, citrusy bite.

Then there’s the Decadent Dairy-Free Fudgesicle. Chocolate lovers, rejoice! This heavenly pop is about to be your new fave. Plus, it houses a hidden ingredient: spinach. This gorgeous green is a great source of antioxidants, iron, and lutein (which protects your eyes). Sneaking veggies into dessert? We won’t tell if you won’t! 😉

I like to make a bunch of these fruit popsicles at once and keep them in my freezer for super hot days (or, let’s be honest, whenever I need a little somethin’ sweet!).

You can even fancy it up by whisking together some of the chocolate dip I’ve included below. Drizzle that on, then decorate your fruit popsicles with dried berries, chopped nuts, or coconut flakes. Yum!

Creamy Dreamy Orange Popsicle

Based on Orange Dream Smoothie from Crazy Sexy Juice
Makes 7-10 popsicles

Ingredients

1 orange, peeled, pith removed, and cut into quarters
1 banana, frozen
1/2 teaspoon vanilla extract or powder
1/8 cup raw cashews
1-1/2 cups nondairy milk of choice

Instructions

1. Wash and prep all ingredients.
2. Blend till smooth and serve.
3. Carefully pour into popsicle molds and freeze for at least 4 hours.

Decadent Dairy-Free Fudgesicle

Based on Chocolate Avocado Smoothie from Crazy Sexy Juice
Makes 8-10 popsicles

Ingredients

2 small bananas, frozen
1 to 2 pitted Medjool dates
1-1/2 tablespoons cacao powder
1/4 Hass avocado
1/2 teaspoon vanilla extract
1 cup baby spinach, tightly packed
1-3/4 cup almond milk or nondairy milk of choice

Instructions

1. Wash and prep all ingredients.
2. Blend till smooth and serve.
3. Carefully pour into popsicle molds and freeze for at least 4 hours.

Optional chocolate dip

3 tablespoons melted coconut oil
3 tablespoons cacao powder
1 teaspoon maple syrup
1 pinch sea salt
